Grendel attacks at night because he is more comfortable with the darkness than he is with the daylight.  He is a descendent of Cain, he lives in a type of hell on earth, he is described as evil and blood-thirsty.  The dark was mysterious because people could not see well in the dark, so the story becomes more exciting having something attack during that time.  It is fitting that something associated with Satan and hell would prefer the dark to the light since light was associated with goodness and God.
